Bump up the nutrition to off the shelf cake batter then spice it up – ah la cardamom
Cardamom Green Pods, Cinnamon Sticks 2.5 Inches, Nutmeg Whole, Whole Oat Flour, Stevia Powder Organic, Dark Brown Sugar
1 box cake mix white or yellow and ingredients on the back of box
1 cup oat flour
1 ½ teaspoons of baking powder
½ teaspoon of stevia extract
2 tablespoons of melted butter or oil (I have used olive oil)
2 apples cut up (or 3 if you like moist and fruity - I like large pieces of apple, but my family likes apples cut up into itsy bitsy pieces)
Topping
Cardamom (about 2 or 3 teaspoons whole) if you LIKE spice for sure do 3 teaspoons Cinnamon (1 stick)
Nutmeg (about 1/3 of a nut)
2-3 tablespoons of dark brown sugar
Add dry ingredients, cake mix, oat flour, baking powder, stevia extract – blend. Add ingredients on the cake mix (usually 2-3 eggs, some oil and water) Add butter or oil apples. Save about ¼ to ½ teaspoon of spice mix – the rest of spices blend into cake mix.
Topping
Remaining spice mix blend with dark brown sugar.
Pour mix into cake pan or cup cakes (I use the big cup cake size) – top with spice and brown sugar mix
Bake at 350 for 40 or 50 minutes for coffee cake (9x11), 20 minutes for large cupcakes, I suspect 13-15 minutes for regular size cupcakes – but I have never made the smaller size cupcakes – so it could be less time

Oatmeal in a blender or food processor can be ground into a course oat flour is how I get ‘oat flour’ it does bake a little heavy – but hey- it upgrades the nutrition and my family doesn’t know I have added oats. Usually I do this monthly and blend up a couple of pounds of oats to have oat flour on hand. I use a marble pestle on the whole spices first in breaking them down– then put them in a blender to get to a powder form. Freshly ground spices are – oh so good.
