Baked Honey Mustard Chicken

Sweet Honey combines with Classic Mustard Powder in this easy recipe. Pineapple or Orange Marmalade add to the complex flavors in this easy baked main dish. Serve Chicken over brown rice or egg noodles, whatever you have in your pantry.



Serves: 4 adults. Time: 30 minutes.

Ingredients:
4 thin chicken breasts*
1 Tablespoon olive oil
1/4 cup pineapple or orange marmalade
1/4 cup sweet honey
2 Tablespoons ground yellow mustard powder
1/2 cup chicken broth
1/2 cup white wine
1 Tablespoon cornstarch


Method:
Brown each side of the chicken in the olive oil over medium heat on your stovetop; about 4 minutes on each side.

Meanwhile, combine the marmalade, honey, mustard, broth and wine together in a medium-size bowl. Finally add the cornstarch and stir until there are no lumps.

Remove the chicken to a baking dish, pour the honey mixture over the chicken. Bake at 350-degrees for 20-25 minutes until the juices run clear.

Serve immediately over brown rice or egg noodles, spoon the extra sauce over the rice.

* Or slice a “normal” size breast in half length-wise if you can’t find them in your meat department. Keeping them thin helps them cook quickly!

I LOVE a soup with long whole grain noodles, copouis amounts of thick red sauce, and perhaps a dash of oregano, wine, or peppers oh wait that is called spaghetti!
