Family Taco Night gets an update with this yummy recipe. Our freshly ground and combined Taco Seasoning leaves the powder packets at the grocery in the dust! And if you really want a flavor update, try frying your own corn tortillas. It adds tons of crunch and flavor!
Serves: 3-4 adults. Time: 30 minutes.
9-10 corn tortillas for frying or 1 box of already fried corn tortillas; both available in the ethnic foods aisle.
Aluminum foil, oil for frying
1 lb. ground beef
1/8-1/4 cup Taco Seasoning depending on taste
3 teaspoons cornstarch
3/4 cup beef broth
your favorite taco toppings: lettuce, tomatoes, avocados, red onions, green onions, olives, cheese, taco sauce, sour cream…use your imagination!
To fry the tortillas- start with a 20” or so square of aluminum foil. Fold in half four times, then fold two opposite edges in to form “feet” so that it stands up by itself.
Add the oil to a cast iron skillet or fry pan, so that it is about 2 inches deep. Bring up to 300-degrees over medium heat.
Fold the tortilla over the form, hold with tongs in the hot oil to fry. Hold the curve at the bottom in the oil for 30 seconds, then each side for another 30 seconds each. Carefully remove from the oil and place on a cooling rack over a baking sheet to catch any oil drips. Let cool another 30 seconds and remove from the form. Continue through the rest of the shells.
*Feel free to fry some flat instead of curved like pictured. Kids like these better because they are easier to pick up and eat (like a pizza slice), and they don’t crack as easily.
To cook the meat- brown the hamburger, then drain and rinse it in a colander. Place back in the hot pan.
Add the Taco Seasoning and stir, cook for about 2 minutes until fragrant. Stir in the cornstarch, and the beef broth.
Cook until slightly thickened, about 3 more minutes. Serve immediately!
