Chinese Chicken Dinner Salad with Oriental Creamy Dressing

With Spring in full swing, it’s time to put some recipes together that don’t need the oven. Dinner salads are a perfect fit! With easy cooked chicken and a rich, classic dressing, this salad is a hit. Top with our slivered almonds and toasted sesame seeds for a flavorful punch.

Serves: 3 adults. Time: 15 minutes.

Salad Ingredients:
2 cooked chicken breasts, or 1 can cooked chicken
1 head of lettuce
3 green onions
1 cup mushrooms
3/4 cup chow mein noodles
1/4 cup slivered almonds
2 Tablespoons sesame seeds
Dressing Ingredients:
1 cup mayonnaise
1/4 cup soy sauce
2 Tablespoons sugar
1 Tablespoons sesame seeds
2 Tablespoons olive oil

Method:
Pour 3 Tablespoons sesame seeds in to a sauce pan over medium heat. Toast for about 5 minutes, or until they smell nutty. Set aside to cool.

Combine the mayonnaise, soy sauce, sugar, and olive oil in a small bowl with a lid. Stir together with 1 Tablespoon of the sesame seeds. Cover and place in the fridge for the flavors to marry.

Roughly chop and wash the lettuce, and green onions. Wash the mushrooms with a damp paper towel and chop them as well. Place in a serving platter or salad bowl.

Top with the chow mein noodles, slivered almonds, and toasted sesame seeds. Pour the dressing over the salad and enjoy immediately!
