Garlicky Wilted Spinach Recipe

This flavorful reduction of garlic and nutmeg scented spinach provides a simple, yet superlative side dish to an Italian dinner. Additionally, it pairs well with scrambled eggs or tofu, packing a vitamin loaded punch into the start of your day.
 
Serves:4 people
Time: 10 minutes
 
Ingredients:
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
18 ounces triple washed spinach
1/2 teaspoon freshly grated nutmeg
Salt to taste
Crushed black pepper to taste
 
Preparation:
1.  Heat large skillet over medium heat and add olive oil and garlic.
2. Saute garlic for one minute.
3. Add enough spinach to cover surface of skillet, adding more leaves in stages once spinach in pan has wilted down. Stir constantly with spatula.
4. Once all spinach has been wilted, season with salt, pepper and nutmeg. Serve and enjoy!
