Latin Pork Chops

The winning combination of citrus and chili gives these spicy chops a flavor you will crave.  Serve with braised greens, any kind of roasted root vegetable and/or steamed rice.  The marinade can also be used on chicken, steak or lamb chops, or as a sauce after the meat has been cooked.

Brown Chipotle Powder, Cumin Ground

4 boneless pork chops, about 1 3/4 - 2 pounds total
Juice and grated zest of 1 lime
3 - 4 garlic cloves, minced
2 teaspoons chili or brown chipotle powder or a combination
1 teaspoon cumin ground
1 tablespoon olive oil
2 tablespoons orange juice
2 - 3 tablespoons finely chopped cilantro
1 teaspoon kosher salt
1/2 teaspoon black pepper

Place everything, except the salt and pepper, in a glass or ceramic bowl, mix well, cover and refrigerate at least one hour and up to 4 hours.

Prepare a grill until very hot.

Sprinkle the pork with the salt and pepper and place on the grill.  Cook until medium in the inside and crusted on the outside, about 5 minutes on each side.  Serve immediately.
