Also Known as: Kanten, Japanese Gelatin, Vegetable Gelatin or Agar 

Origin: Asian 

Ingredients: Agar Agar Powder 

Taste and Aroma: Flavorless 

Uses: A vegetarian substitute for gelatin, agar agar is primarily used for thickening in: Desserts, soups, ice cream, brewing, jelly, jello, custard, gravy and sauces. 

Substitutes: Unflavored Gelatin (Not Vegetarian)

Fun Fact: Agar Agar's absorption properties is the basis of the popular Kanten Diet in Asia, which has shown preliminary encouraging results in obesity studies.
