I made low carb biscuits and hand pies with this flour & both times
the finished baked goods left a raw, very unpleasant film in the back of throat when swallowed similar to when peanut butter is swallowed but without the initial joy; not only that but both baked goods were extremely fragile and crumbly, I guess I'm just not familiar yet with baking with low carb flour;so far I've had the best
results with the coconut & tapioca flours I've bought from my spice sage.
Love the almond meal for my recipes. As a diabetic the nut protein helps keep my blood sugar balanced and my gluten intolerant son in law loves my muffins, too. Was disappointed that 10 lbs was the smallest size available when it was delivered in 1 lb bags. Fortunately, I had someone to share with.
