This salad will go well with all types of cuisine:
Greek, Italian, French, Spanish, Catalan and Moroccan dishes.
Black Peppercorns, Dill Weed, Oregano Greek, Sonoma Sea Salt, Thyme Leaves
16 ounces Green salad mix of your liking
1 cup fresh Red peppers, finely sliced
½ cup of finely sliced Red Onions
2 tablespoons Red Wine Vinegar
6 tablespoons- Virgin Olive Oil
A pinch or two of dry Thyme, Oregano and Dill
1 Tablespoon of Dijon Mustard
2½ cups- Sliced Strawberries
1¼ cup- Mashed Strawberries
Sea Salt and Fresh Ground Pepper to taste
¼ cup- Sugar
Vinaigrette Dressing:
1. In a small bowl mix the vinegar and a pinch of salt and let stand a few minutes
2. Add the Fresh Ground Pepper and slowly whisk in the oil
3. Add the Dijon mustard, blend well
4. Add the mashed Strawberries, blend well
5. Add the dry ingredients, Thyme, Oregano and Dill and continue whisking
6. Taste for acidity and salt levels and add more if too bland. Continue whisking until well emulsified
7. Add sugar, adjust to your taste
Salad:
1. Place salad mix into a large serving bowl
2. Add fresh, finely sliced Red pepper
3. Add the finely sliced red onions
4. Add the sliced strawberries
5. Toss gently
6. Add a portion of the vinaigrette, toss together until well coated
7. Serve on chilled salad plates
