Curried Salmon Steaks with Cilantro and Coconut

The Thai-inspired mix of seasonings give an exotic fragrance and enticing flavor that goes oh-so-well with the smooth, buttery richness of salmon steaks.  The high heat of the grill seals in all the moisture and keeps the flesh tender as can be.  Serve with jasmine or basmati rice.

Cayenne Pepper, Cumin Ground, Curry Powder, Garlic Powder Granulated, Ginger Ground

1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon ginger ground
2 teaspoons curry powder
1 teaspoon cumin ground
1/2 teaspoon cayenne pepper
1 teaspoon kosher salt
4 salmon steaks
3 tablespoons chopped fresh cilantro leaves
2 tablespoons sweetened or unsweetened coconut, toasted or not
1 lime, quartered 

Place the olive oil, garlic, ginger, curry, cumin, cayenne and salt in a small bowl and mix until well combined.  Coat both sides of the salmon steaks, cover and refrigerate at least one hour and up to overnight.  

Prepare a grill.

Place the salmon steaks on the grill and grill for about 5 minutes on each side.  Serve immediately, garnished with the cilantro, coconut and lime.
