Fire Salt Roasted Carrots

Sure to turn anyone into a carrot lover; roasting brings out a complex sweetness that is addictive.

1 pound carrots, peeled, trimmed and cut into spears
1 tablespoon olive oil
1/2 teaspoon Fire Salt 

Preheat the oven to 500 degrees.

Place the carrot spears on a baking sheet, drizzle with the oil and sprinkle with the Fire Salt.  Mix well and transfer to the oven. Roast until the carrots are tender and golden brown, 20 - 30 minutes.  Be sure to start checking the doneness at about 20 minutes to make sure they don’t burn.  Serve immediately.
