Frittata with Cardamom

Frittatas are a classic brunch or lunch staple for a reason: they are easy to make, scrumptious to eat and always a crowd pleaser.  The addition of cardamom adds a hint of flavor that takes this above the ordinary to the “wow”.

Basil Leaves, Black Peppercorns, Cardamom Ground

8 large eggs
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 scallions, chopped
2 - 2 1/2 cups chopped spinach
1/2 cup shredded or diced cheddar cheese
1/2 cup cubed day-old bread
1 teaspoon dried basil leaves
pinch cardamom ground
2 teaspoons olive oil

Preheat the oven to 350 degrees.

Place the eggs, salt and pepper in a medium-size mixing bowl and whisk to combine.  Add the remaining ingredients, except the oil, and mix well.

Place a 9 or 10-inch ovenproof skillet over medium heat and when it is hot, add the oil.  Add the egg mixture and transfer to the oven.  Bake until the eggs are set and the top is golden, about 20 minutes.
