Roasting gives ordinary mushrooms a deeper, richer flavor; when combined here with wild mushrooms, the taste is taken to a whole new plane.  Fantastic with any roasted meat or poultry.

Black Peppercorns, Rosemary Needles

1 pound button mushrooms
1 pound assorted wild mushrooms
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon dried rosemary needles
1/4 teaspoon black pepper 

Preheat the oven to 400 degrees.

Place all the ingredients in a bowl and mix well. Transfer the mushrooms, in a single layer, to a baking sheet; place in the oven and roast until they are lightly browned and have released their juices, about 20 minutes.  Serve immediately.
