Orange Vinaigrette

Try this on a salad of romaine with endive, yellow peppers, tomatoes, cucumbers, peaches and goat cheese or on arugula with thinly-sliced red onions.

Black Peppercorns, Orange Peel Zest

3 tablespoons sherry vinegar or 2 tablespoons red wine vinegar and 1 tablespoon sherry
2 tablespoons orange juice
1 teaspoon orange peel zest
1/3 cup olive oil
Salt and black pepper to taste

Place everything except for the olive oil in a blender or a food processor fitted with a steel blade and process until thoroughly combined.  While the machine is running, gradually add the olive oil.  Add salt and pepper to taste.

Yield: about 3/4 cup
