Sage and Thyme Potatoes

Crispy, browned potatoes redolent of the savory aroma of sage, garlic and thyme are a wonderful accompaniment to a leg of lamb or a roast chicken.

Sage Leaves, Thyme Leaves

3 pounds new potatoes, halved or quartered
2 tablespoons olive oil
4 - 6 garlic cloves, finely chopped
1 teaspoon dried thyme leaves
1 1/2 teaspoons kosher salt
½ teaspoon dried sage leaves 

Preheat the oven to 450 degrees.

Place the potatoes in a large bowl.  Add the olive oil, garlic, thyme, salt and sage and mix until combined.  Place the mixture on a baking sheet or in a large ovenproof skillet, transfer to the oven and cook until browned, 35 - 45 minutes.  Serve immediately.
