Spicy Glazed Carrots

Hot chili powder and sugar marry together to produce a succulent glaze on these fresh carrots. This new side dish is a sweet spin on an old favorite.

Hot Chili Powder

5-6 carrots
1 Tablespoon butter
1 cup water
1 Tablespoon sugar
1/2 teaspoon hot chili powder

Wash and peel your carrots. Then slice them on a bias, this will keep the carrots in one piece through the cooking process.

Melt the butter in a medium saucepan. Add the water and carrots. Bring to a boil then cover and cook for five minutes.

Uncover and reduce to a simmer. Add the sugar and hot chili powder. Cook until tender, about 10 more minutes. The sauce will reduce to a glaze.
Taste a carrot to check flavoring, and doneness. Adjust flavoring to taste and serve.
