Not Exactly As Fine Or
Not exactly as fine or red as I would have liked so it's not exactly traditional, but man, this "Tandori" spice blend made some of the most tasty cast iron roasted chicken we have every eaten. Try this, cleaver cut 3 large chicken quarters (thigh & legs). In a mixing bowl generously coat the chicken pieces so they are evenly coated with spice and make sure you add a good amount of salt, the blend is not salted. Chop up some large sweet onions and mix with a little oil into a large cast iron skillet. Rest the spice rubbed chicken pieces on top of the onions and roast for 45-60 minutes, occasionally turning chicken to brown evenly. Sever on bed of basmati rice with green peas, it's epic.
