Uses: Great gluten-free substitute for gluten free baking. Thickener for smoothies, ice cream, sauces, salad dressings, bread, pasta, pancakes, cupcakes and cake. Also an emulsifier in sausage making.
Substitutes: Guar Gum, Gum Arabic Powder, Clear Jel Instant, Tapioca Starch, Clear Jel Cook Type, Locust Bean Gum,Spelt Flour, Soy Flour Defatted, Arrowroot Powder, Potato Starch.
Fun Fact: Perhaps one of Xanthan's Gum coolest applications, among many, is its ability to prevent those annoying ice crystals from forming in ice cream.
